Now that I’m in my third trimester and have a toddler to feed (who turned three last week!), I love cooking super quick recipes that will make us all feel great.

I am so excited to share my new favorite family-friendly dinner recipe, which is not only packed with veggies (a ton of cauliflower), it’s loaded with protein, too. I love brands that are mindful of ingredients, so I was thrilled to partner with Pasta Lensi. Unlike other legume pastas, Pasta Lensi makes a red lentil fusilli made from just one ingredient – red lentils! It also contains 26 grams of protein in each 3.5oz serving, which is a lot of plant-based goodness and is GMO-free.

The sauce is so delish too. It’s a dairy-free alfredo sauce that is made creamy with cauliflower and almond milk. And it’s super easy to whip up. Just cook the cauliflower (you can cut a head of cauliflower, use already-cut florets, or pre-riced cauliflower) with a little garlic, oil and almond milk, then use a blender to blend it all up and voila! Red Lentil Fusilli Pasta with Creamy Cauliflower Alfredo Sauce in less than 20 minutes.

This is one of my family’s newest fave recipes because it tastes indulgent and delish. I especially love that the legume pasta is made with just one ingredient, and the creamy sauce is packed with veggies!

Red Lentil Pasta with Creamy Cauliflower Alfredo Sauce

What You Need:

  • One 10oz box of Pasta Lensi Red Lentil Fusilli 
  • 1 teaspoon olive oil
  • 4 cloves garlic, minced
  • 1 head cauliflower, cut into florets (approximately 14 medium florets/6 heaping cups or one bag of 12oz riced cauliflower)
  • 1 cup almond milk (unsweetened)
  • 1/2 teaspoon fine sea salt
  • 1/8 teaspoon nutmeg
  • black pepper, to taste
  • parsley, to taste
  • grated Parmesan cheese (optional), to taste * I like sheep’s milk Pecorino Romano

Directions:

  • To make the pasta: follow the directions on the side of the Pasta Lensi Red Lentil Fusilli box (takes only 8-10 minutes to cook)
  • While pasta is cooking, make the sauce (recipe below)
  • To make the Creamy Cauliflower Alfredo sauce: in a small saucepan over low heat, add olive oil and minced garlic. Mix with a wooden spoon or tongs and cook until fragrant, approximately 1 minute. 
  • Add almond milk, cauliflower, sea salt and nutmeg and stir
  • Turn heat up to medium and heat mixture until boiling
  • Once boiling, cover the pot, turn heat down to low and simmer for 5 minutes or until cauliflower is soft. Stir occasionally
  • Once cauliflower is soft, carefully transfer the cauliflower mixture to a blender. (Be careful as mixture will be hot!) Blend on high for 30 seconds until creamy
  • Place Red Lentil Fusilli in a big bowl, drizzle creamy cauliflower alfredo on top, garnish with a little black pepper, parsley and Parmesan cheese (optional) to taste and voila!

*I like serving family style in a big bowl or if you prefer, you can place in individual bowls

Serves: 4-5.

When Gemma (my almost-2 year old) started to wake up in the middle of the night and ask for massages, I knew I needed to change something! When she wakes up in the middle of the night, we lose sleep, and the day after, I end up feeling like a zombie. With everything that we have going on (life + opening a restaurant soon), there’s no way we can be our best selves without sleep!

That’s why I was really psyched to host a sleep training event with NYC sleep consultants last week at Union Square Play in NYC alongside my friend and amazing child educator, Jennie Monness of Mo’mommies.com .

At last week’s “Staying Sane” Event, we discussed sleep training and tips to get your baby/kid to sleep well, so you can get more sleep, too. Thanks to my amazing co-host, Jennie Monness of Mo’mommies.com and the informative panelists of moms/sleep consultants, Lauren Wolf of Lololullaby.com, Sari Broda of theChilpil.com and Ruby Sibal of Thisismeruby.com and beyondbabycare.com, I left the event with tons of helpful and practical tips to make sleep easier for me and easier for my child.

Gemma is no longer waking up in the middle of the night and when she tries to delay nap or sleep asking for a massage, I now feel more confident to be firm and not give in. It works! She may not fall right to sleep, but I’ve learned that the more I offer her long, drawn out soothing remedies, the more she will depend on them. Rather, I make her feel comforted in a short amount of time and try to encourage her to soothe herself to sleep.

At the event, moms (and dads) tooks tons of notes, laughed and mingled.

My life has been very full lately getting Lucky Lee’s officially set up for business, but there’s nothing more that I love than connecting with my fellow mamas and offering tips to help them (and me) stay more sane!

It is with great excitement that I share the official first glimpse of Lucky Lees NYC, a Be Well with Arielle-style Chinese Food-inspired restaurant opening in Greenwich Villag, New York City!

Lucky you, lucky me and lucky Lee (my husband), we will be wokking up the yummiest menu of noodles, soups, veggies and yes, even items like Gluten-Free Dumplings, Honey-Glazed Spare Ribs and Baked General Tsos Chicken!

OMG OMG OMG.

Staying Sane Event: Kids Nutrition Recap

My heart is full from last night’s “Staying Sane” Event. It was amazing!

Our intention was for guests to leave feeling empowered, confident and inspired to feed their babies and kids. Guests included moms (with kids ranging from 3 months to 8 years old), as well as professionals, including pediatric nurses, dietitians and occupational therapists.

When everyone arrived, we first asked them to write down their questions.

Mom Hack for Ordering Groceries

One of my fave mom hacks every week is ordering from Fresh Direct because I can shop for all of my grocery items online and have them delivered to my door the next day. 

Here are the reasons why I love ordering online:
1. My time and energy is precious. Fresh Direct saves me time walking to/from the store (and energy shlepping) all of the bags, too
2. I can find (mostly) all of my fave healthy products and brands, including local products like Hu Kitchen chocolate, and seasonal produce like pears and kale
3. You can look up all of the ingredients and nutrition facts on products, and even get quick recipe inspiration, too
4. Comparable prices and reasonable delivery fee
5. I can make quick and healthy meals at home so it makes my life easier
6. And last but not least, saves me from dealing with a public meltdown – don’t have to walk aisle through aisle or wait on long lines with a toddler!

Don’t get me wrong, food shopping is my favorite activity (it really is!!!) but my happiness, energy and time are my priority now. Honored to share my experience as an #fdambassador and hope this inspires you to find ways to be well and stay a little more sane, too!

The Magic of Magnesium Oil for Better Sleep

My sleep had been great until a few months ago. Even with my eye mask on (and black out shades covering my windows), I noticed that I was waking up on edge with the feeling like I had hardly slept.

Until… I tried magic on my feet: magnesium oil.

I’ve been using it for about three weeks now and the one night I didn’t have a good, deep night of sleep, I forgot to use it. I’m convinced it’s magic. Every morning since, I’ve been waking up feeling well rested..

How to Prepare Your Body for Pregnancy

Since I was on digital detox for the past month, some of my friends suspected that I’m pregnant. Although I’m not actively trying to have another baby just yet, I am taking care of my body as though I am so I’m back on my fertility/pregnancy regimen!

After seeing countless doctors and healers in order to get pregnant with Gemma two years ago (including multiple OBGYNs, gynecologists, endocrinologists, a mayan abdominal masseuse, medical herbalist and even, a hypnotherapist), I want my body to be ready when we are ready to try again.  Also, when I was on this fertility diet/plan, I felt better than ever.

The person who ultimately helped me get pregnant was Aimee Raupp. She is a fertility expert based in NYC, an acupuncturist and author of the books “Yes, You Can Get Pregnant” and “Body Belief”. She gave me food recommendations, supplement recommendations and totally upgraded my health and improved my chances of getting pregnant naturally.

Aimee recently launched a series of videos for her fertility e-course and shared the best supplements to boost fertility. She helped me get pregnant and she helped countless of my friends and friends of friends, too.

In case you missed the videos, here are her takeaways on the best foods and supplements to upgrade your fertility:

  1. If you want to radically shift your health so you can get pregnant, food is the #1 way to do it.  Aimee recommends limiting dairy and gluten and adding in organic cooked vegetables, pasture-raised eggs as well as grass-fed beef a few times a week. She also recommends eating some type of protein within 30 minutes of waking up and every 2 hours during the day to help balance your blood sugar (and hormones).
  2. For hormonal balance, she also recommends taking 1-2 tsp of Cod liver oil, which has “naturally occurring” vitamin A and vitamin D. I took the gel caps (see below for link).
  3. Since most people aren’t taking a prenatal vitamin with folate, she recommends taking a supplement with methylfolate, like grass-fed liver pills. Liver has a really distinct taste, so Aimee recommends taking it in pill form.
  4. She also recommends taking Spirulina, which she refers to as “natures multivitamin”.  She recommends 6 pills per day, so to make it easy, I blend them in with my smoothie.

She also mentions taking magnesium oil to help calm the immune system, aid in sleep and balance hormones. She recommends 10 squirts on bottom of feet, your chest and/or belly. FYI – I haven’t tried this yet, but I swear by everything Aimee recommends so I’m going to start this week as soon as I receive my bottle.

Digital Detox: Morphing into Me

For the past month, I’ve been taking another digital detox (aka some time away from instagram). I occasionally will scroll through posts and watch some instastories, but I haven’t posted in a while and I spend wayy less time mindlessly scrolling through other people’s photos. I needed this detox more than ever.

Here’s why and what inspired my digital detox:

  • I began feeling really uncreative. And no wonder! Every second of downtime, I mean every second of downtime, I would scroll through instagram. I never gave myself any time to wonder, to day dream, to think, to create. 
  •  I also have been on mom duty pretty much all day every day for the past few months. While I really tried to multitask between mommyhood and Be Well with Arielle brand and instagram and other projects, I would find myself totally disengaged with Gemma, scrolling through instagram mindlessly while we were walking together, talking, eating and playing. If I was making a conscious choice to be with her, I actually needed to be with her.

So while away on vacation with my family last month, I took a break posting on instagram, and well, I haven’t posted since! And in all honesty, it feels so much lighter and better.

What I’ve learned from being on the digital detox:

  • Time is expanded. Even though I feel like the day flies by and I still have “no time” I find pockets of time through out the day.  While Gemma naps in the afternoon, I write in a journal for about 20 minutes and then I sit meditate if I have some extra time for 2-20 minutes. I put on relaxing music and write nonstop for 3 pages. It’s been such a therapeutic way to get my thoughts out of my head. It’s also a great way to boost my creative juices. 
  • I started to see things differently and got inspired to organize my house. I got a new console for my entryway which helps me feel super organized and gets me excited to walk in the door. I also got a big calendar where I keep our schedules organized. I also organized all of our papers – got a big box with file folders so everything from Gemma’s birth certificate, to our passports are all in one place. I also organized all of Gemma’s old clothes. It really feels so good to be so clean and organized!
  • I’ve also been reading more! Instead of scrolling through instagram before bed, I curl up in bed and read. Currently, I’m reading: No Bad Kids by Janet Lansbury
  • I’ve also been listening to more podcasts (How I Built This by Guy Raz is my fave). I listen to it while blow drying my hair, putting my makeup on and occasionally when I’m walking Gemma around the park.

Since being on the digital detox, I feel:

…more creative than I have in a long time. The other day, I wrote in my journal that I feel like like I’m “morphing”. Detoxing from instagram has felt like I’ve been closing myself off to the world like a cocoon. I felt bad about it (it’s not my nature to hide) until I realized, just like caterpillar, it’s ok to step away, cocoon and be by myself for a bit. This digital detox has given me some time to myself and family so I can prepare to spread my wings, just like a butterfly. 

I also just officially stopped breastfeeding a few weeks ago. Gemma just turned 19 months and up until then, I was nursing her every morning. A few months before that, I breastfed her every night before she went to bed too. While nursing her has been a very sweet and rewarding experience for both of us,  I felt it was also time consuming and energy zapping, too. I’m excited to have even just a touch more time in my morning and evening, and a little more space to myself (and my body) now, too!

Summer Guacamole with Basil

Yesterday when I was shopping around the Union Square Farmers Market in New York City, I spotted someone carrying bags and bags of basil. I had a feeling he was a chef, so asked him what he was going to make. He rattled off a few dishes, one of which was Basil Guacamole. Yum!

So, I too, bought some basil (and tomatoes, onions, lime and avocado) and walked home feeling super inspired.  

He was from Cosme, a modern Mexican restaurant in Flatiron, New York City. Not sure what how they make it there but loved the idea of adding a summery herb.

Here is my take on Basil Guacamole – so fresh and delish! 

Summer Guacamole with Basil
What you Need:
– 1 avocado (chilled if possible)
– 1/2 white or red onion, chopped (approximately 1/4 onion)
– 7 pieces fresh basil, shredded or chiffonade
– 1 Tbs lime, juiced
– 1/4-1/2 tsp fine sea salt
– 1/2 cup cherry tomatoes, quartered (approximately 10 cherry tomatoes)

Directions:
1. Mash avocado
2. Add in onion, basil, lime and sea salt and mix well. Add in 1/4 tsp of sea salt to start and then add in depending on preference 
3. Add tomatoes and lightly mix

I love serving with colorful radishes, cucumbers, sliced peppers, romaine lettuce leaves and strips of raw zucchini during the summer or veggie chips.

*Tip: I recommend chilling the Basil Guacamole in the refrigerator before you eat – will bring out the flavors of the basil even more. Also, cover with plastic wrap to prevent it from oxidizing.

The basil really stands out, so if you’re craving Mozzarella, Tomato and Basil, but don’t want to have cheese, believe it or not, this is a great dairy-free alternative to your fave summer dish! And, obviously, it’s a great alternative to plain guac too. And, also, a great alternative to guac made with cilantro! So, it’s overall a great idea.

City Harvest Summer in the City Event

Honored to be on the 2018 City Harvest Host Committee supporting their Summer in the City Event! They’re celebrating their 35th anniversary with a delicious event with 40 of the city’s hippest chefs, restaurants and mixologists will provide sips and bites to over 700 attendees, alongside exciting entertainment and interactive experiences. Get tastes from some of my favorite restaurants – Meatball Shop, Seamores and Made Nice and more!

City Harvest picks up over 59 million pounds of food a year from grocery stores, restaurants, manufacturers, businesses and greenmarkets, that would otherwise go to waste and delivers it to 500 soup kitchens and food pantries throughout the five boroughs. Pretty impressive and amazing.

Chocolate Chip Cookies

This past weekend my husband convinced me to go for Korean BBQ. It was so salty that right after I craved something sweet. So when we returned home, I whipped out the bag of almond flour to bake some cookies and lo and behold saw a recipe on the back for chocolate chip cookies. Thanks, Bob’s Red Mill for the inspiration!

I love creating my own twist on recipes, but this one looked so simple so I gave it a try. And it was pretty delish so wanted to share! My nephew and niece were coming over the next day for Mother’s Day so I made half of the batter chocolate chip and half with natural sprinkles on top.

Chocolate Chip Cookies
What You Need:
3 cups Almond Meal (I used Bob’s Red Mill super fine blanched)
1 tsp Baking Soda
1/2 tsp Sea Salt
1/4 cup Coconut Oil, room temperature/liquid
1/4 cup local Maple Syrup
1 Egg, room temperature
2 Egg Whites, room temperature
1 tsp Vanilla Extract
1 cup Dark Chocolate Chips or Dark Chocolate Bar, chopped (I didn’t have chocolate chips so I chopped up this chocolate bar made with coconut palm sugar)
1/4 cup rainbow sprinkle confetti  (optional)

Directions:
1. Preheat oven to 375°F
2. Line two baking sheets with parchment paper
3. Combine almond meal, baking soda and sea salt and set aside
4. Mix coconut oil and maple syrup in a mixer or by hand until creamy (about 5 minutes). I used this handheld frother. Note- My coconut oil was solid, so I lightly heated the coconut oil and maple syrup in a small sauce pan until the coconut oil became liquid and mixed it directly in the pot on low heat to save time. Tip – Make sure the coconut oil isn’t hot, though, because you don’t want the eggs to cook in the next step
5. Add whole egg, egg whites and vanilla and mix for 2 additional minutes
6. Slowly add dry ingredients to egg mixture and mix.  Add 3/4 cup chocolate chips/chunks and mix until well combined. Save 1/4 cup chocolate chips/chunks to the side. (If making sprinkle cookies too, mix in all of the chocolate chips and separate batter into two)
7. Place large rounded tablespoons onto prepared baking sheets, about 1-inch apart. Flatten slightly with hands or spatula, to approximately 1-inch thickness. Add a few chocolate chunks on top on the chocolate chip versions and sprinkles on the sprinkle versions! Pat down with fingers to make sure they stick
8. Bake until set and golden, about 15 minutes. (Tip= If you’re making chocolate chip cookies with chocolate on top – when there’s 5 minutes left on the timer, add a chocolate chunk on top of the cookie)

Voila!

Makes 25 cookies.

Chocolate Avocado Pudding

I never liked chocolate. Ever since I was pregnant, though, I have loved chocolate. Whenever I crave it, I usually opt for a few pieces of a chocolate bar made with coconut palm sugar (love Hu Kitchen’s Mint Chocolate Chip) or I’ll make my homemade healthified hot chocolate or this chocolate avocado pudding recipe (below). These treats satisfy my cravings instantly and I feel great eating it knowing that I’m putting whole, un-refined ingredients into my body.

Most store-bought chocolate puddings are made with milk, cream, soy and tons of sugar. So to achieve a similar super creamy texture without compromising flavor, I used avocados and almond milk. To sweeten it up, instead of white sugar, artificial sugars, stevia or monk fruit, I use pure maple syrup. Dates, honey or coconut nectar are also good alternatives to sweeten but I find that maple syrup lends the perfect sweetness, consistency and rich flavoring.

This chocolate pudding is a super rich and decadent treat. Often I’ll just need a spoonful (or two or three!) to satisfy my chocolate cravings. Best of all, it’s super easy to make – just blend up the ingredients and voila! Dessert is ready.

This recipe is for plain chocolate avocado pudding and I’ve included a ton of additions to fancify it up.

Plain Chocolate Avocado Pudding
What you need:
2 ripe avocados, pitted
1/2 cup unsweetened almond milk
1/2 cup raw cacao powder
4-5 Tbs pure maple syrup
1 tsp vanilla extract
1/4 tsp sea salt

Directions:
1. Blend all ingredients on low in a blender until super smooth and voila!

Yields:
Approx 2 cups chocolate pudding. Store in an airtight glass container. Top with some fruit, shredded or flaked coconut, nuts or even natural sprinkles! Or, mix in some of the mix-ins below for additional flavor.

Flavored Chocolate Pudding Ideas:
– mint chocolate chip (I like to use pure peppermint extract and unsweetened raw cacao nibs. I suggest starting out with 1/4 tsp peppermint and 2 Tbsp and add depending on how minty and crunchy you want it)
– almond (start out with 1/4 tsp almond extract and increase depending on how rich you want it). you can add some sliced almonds on top, too.
– ground cinnamon (start with 1/4 tsp)
– ground ginger (I like to use ground ginger powder. start with 1/4 tsp)
– fruit (fresh blueberries, strawberries, raspberries)
– orange (use the zest from the peel)

Food Trends: What Diet is Right For My Body?

It’s always been a challenge to figure out the right foods and exercise for your ultimate bod, but with the rise of social media, it’s getting more confusing than ever! Do you agree?

Some say plant-based is the key to glowing skin and a fit body, while others say a diet high in protein from animal sources is the best for energy, strength (and fertility). High fiber crackers or gluten-free? Whole grains or no carbs whatsoever? Food combining or intuitive eating? Or strict science-based practices? 

What and who should we believe?! And most importantly, what the F can we eat?!

I’m not going to tell you what to eat or how to eat, but below I will offer a few suggestions on how to figure out if a food/theory/philosophy is right for you. 

Arielle’s Approach to Figuring Out What to Eat:

1. In order to determine if the food philosophy/food/way of eating is the right fit for you, your body and your lifestyle, test it by the way it makes you feel and the way it makes you feel even about thinking about it. Ask yourself: 

– Does this way of eating make me think of my body in a healthy way?

– Does this way of eating excite me to take better care of my body?

2. If you feel excited to test it out, committ to it for one entire day. I believe that if it’s a sustainable approach, it should make you feel better even within one day.

Here are a few questions to ask yourself:

– Does this way of eating fill me up? Do I feel energized when I wake up in the morning? How do I feel during the day? And how do I feel at the end of the day?

– Does this food satisfy all of my cravings?

– Do I feel deprived of any of my favorite foods? If so, what?

– How satisfied am I at the end of a meal? How satisfied am I at the end of the day

– Am I excited to eat?

– Do I feel like this is sustainable? Could I see myself eating this way next week? Next month? Next year? Forever?!

A “healthy relationship with food” is certainly different for everyone. But, eating should be FUN. Do you agree? Food is delicious and meals should feel easy. Do you agree with that, too? And, feeling your best shouldn’t feel like a struggle – it should and could be EXCITING! If you agree, remember that no matter what you choose to eat (and choose not to eat), a food philosophy shouldn’t make you overthink, or feel deprived or obsessive. Food should make you feel empowered, energized and satisfied.

I hope this is helpful. May you feel great about your choices and may you love and take care of your body the way it deserves to be treated.

Maple Dijon Vinaigrette Salad Dressing

I love this healthy homemade salad dressing – Maple Dijon Vinaigrette Salad Dressing because you can make it using 1 hand in 1 minute!

Maple Dijon Vinaigrette Salad Dressing
What you need:
1tsp olive oil
1 tsp apple cider vinegra
1 tsp maple syrup
1 tsp dijon mustard
1 tsp lemon juice
1 pinch of sea salt


Directions:

Mix it up in a bowl with a fork or froth and add to a salad! Here, I’m eating local greens, organic cherry tomatoes, organic feta cheese and organic chicken sausage. 

P.S. This is the frother I use. I use it for tea lattes or to emulsify salad dressings quickly. I’ve been using this one for 8 years – lasts a long time!!!
