Some of my friends at work were inspired by http://www.101cookbooks.com/archives/peanut-butter-krispy-treats-recipe.html but i dont eat peanut butter and I was too cold to trek to Whole Foods tonight to buy brown rice crispies so used what I had in my cupboard to make my version – Arielle’s Popcorn Pizazz!
– 3/4 cup of cashew butter
– 2 cups kettle corn popcorn
– 1/4 c sunflower seeds
– 1/4 c pecans
– vegan chocolate chips
Word to the wise when using my recipes- I often don’t measure so the amounts listed are what I approximately used! Have fun…cooking doesn’t need to be so serious. And, best of all, you can make it your own so use add more seeds if you love seeds!
Used kettle corn because thats all i had..but then figured didnt have to add any sweetner. If you’re using krispies or regular popcorn, you may sweeten with a little agave or brown rice syrup or maple syrup.
Place cashew butter (or nut butter of your choice) into sauce pan and heat until melted. Mix in popcorn, seeds and nuts (any that you wish) until evenly distributed! Add some vegan chocolate chips on top. Perfect sweet, crunchy and gooey treat to chomp on while watching the Olympians ski down the mountains!
