Healthified Almond Butter Brownies

When it snowed last week, we were cooped up in the apartment with Gemma and I couldn’t think of a better activity than to bake!

I didn’t have any flour on hand (I typically use almond flour) and I didn’t have any sugar crystals on hand (I typically use coconut palm sugar), so I used what I had in my pantry and whipped up this amazingly delicious Healthified Almond Butter Brownie.

No flour necessary. No refined-sugar, either. Just simple ingredients that you hopefully already have in your kitchen!

They take about 30 minutes in total to make, so it’s the perfect treat when you’re craving something sweet stat.

And believe it or not, the are super fudgy, but no butter, flour or white sugar is in them. To healthify them, I used almond butter and maple syrup. And to add a little flair, I added almond extract for an extra dose of nuttiness, as well as some almond slivers on top for prettiness. The almond extract makes it taste like marzipan or a macaroon – so yummy!

Almond Butter Brownies

What You Need:
2 cups unsweetened creamy or crunchy almond butter
2/3 cup pure maple syrup
2 pasture-raised eggs
4 Tbsp aroma-free coconut oil
2 tsp pure vanilla extract
1 tsp almond extract (optional for extra almond flavor)
2/3 cup raw cacao powder
1 tsp baking soda
1/8 tsp sea salt
3 Tbsp cacao nibs  or mini chocolate chips
2 Tbsp almond slices or slivers (optional)
1 Tbsp coconut oil for lining pan

Directions:
1. Preheat oven to 325F.
2. In a large bowl, whisk together wet ingredients – almond butter, maple syrup, egg, coconut oil, vanilla and almond extract. Add in cacao powder, baking soda, sea salt, 2 Tbs cacao nibs (or chocolate chips) and mix well until becomes batter-like.
3. Using a paper towel or your fingers, spread coconut oil on all sides of 9-inch baking dish or pan which will help prevent mixture from sticking later on.
4. Pour batter into a baking dish or pan. Add 1 Tbsp cacao nibs or mini chocolate chips on top and pat down with fingers or spatula until flat.
4. Bake for approx 20-25 minutes until the brownies are hard on top but soft in the middle. Add sliced almonds on top. I also drizzled a little white chocolate on top too for decoration! *Please note – every oven is different. Mine comes out perfectly around 23 minutes, so check every so often so you get the perfect texture.
5. Let cool. Tip – slice with a bread knife into squares.
