Whole Wheat (and Spelt) Matzah Brie!

If you observe Passover*, I recommend munching shmurah, whole wheat and spelt matzah/matzo. In my opinion, they’re the tastiest and healthiest, and most important of all- they will keep you “regular”!

On the subject of matzah, enjoy my recipe for Whole Wheat Matzah Brie below (a Jew’s Passover favorite!)…

Ingredients:
– coconut oil
– farm fresh eggs (notice how yellow/orange mine are = fresher)
– whole wheat matzah (or spelt)
– honey (local)
– sea salt
– cinnamon (optional)


– break matzah into small pieces
– run matzah under water/soak in water to make it soft(er)
– whisk eggs in bowl
– add matzah to egg mixture and let soak

– add coconut oil to pan
– put matzah/egg mixture in pan and make like french toast!

– add honey, maple syrup, cinnamon, coconut palm sugar or whatever toppings you like!

Many people complain that the entire week of Passover always makes them constipated. Well, no wonder why! Most matzah is made of white flour! Stay “regular” with whole wheat and spelt…continue eating lots of veggies and of course, drink a lot of water to flush everything out!

Here is what I like/recommend:

– Shmurah Matzah (made locally and fresh). Look up where you can get in your neighborhood.
Streit's Whole Wheat MatzosIngredients: Whole Wheat Flour, Water.
Manischewitz Spelt MatzoIngredients: Spelt Flour, Water.

I made it just like I do with french toast. Definitely didn’t taste like my Dad’s (his is really the best!) – mine turned out a little too eggy, but we still enjoyed it!

(*please note- I do not observe Passover as strictly as others, so use “kosher for passover” ingredients as needed/use caution when using my Passover recipes).
