iloveME Mondays: A Snapshot of Cousin Elizabeth!

Meet my Cousin, Elizabeth FIERMAN- a sports FANATIC and an iloveme ring lover! I don’t have a huge family, so I especially love my cousins who share the same last name as me!!! Not to mention, she is SO sweet, very ambitious and loves to cook, like me!

Q: What piece of Be Well with Arielle iloveme collection do you have? Metal, Color of Pearl, Diamond?
A: I am the proud owner of a a silver iloveme ring with a white pearl.

Q: What attracted to you to the iloveme ring/why did you buy it?
A: I was so proud of my amazing cousin for designing the collection and I had been following her career from the start – I couldn’t wait to support her! Aside from also being such a unique piece that’s always an instant conversation starter, I love sharing the backstory and message of jeWELLry with people that see the ring. It’s like paying it forward and sharing the message about the importance of loving and taking care of yourself so you can love and take care of those you care about. My mom ended up buying it for me for my birthday!

Q: How often do you wear your ring?
A: All the time!

Q: If you could be anything you would want to be, what would you be?
A: I think my dream job changes on a weekly basis! I’d love to work in community relations for an NHL franchise, but more importantly, I always just strive to be a compassionate, caring, good person, daughter, granddaughter and friend. I think that’s more important than any job title I could ever hold.

Q: What is one success that you can brag about? (bragging about yourself helps to inspire others!)
A: This is so tough! I don’t like bragging, even if there are things that I’m proud of. When I was a senior at Boston University, I was inducted into the Scarlet Key Honor Society, which meant a lot because it honored a select group of seniors for their involvement and leadership in the campus community, not just work in the classroom. Also, I was really proud when I reached a benchmark of visitors to my my blog that I never thought I’d get to in a million years!

Q: I know you’re a huge sports fan- what is your favorite sport?
A: Hands down, it’s got to be hockey! I love college hockey more than professional hockey, but any kind will do. I also love baseball, golf, college basketball and shocking to me and everyone I know, I’m actually sort of getting into football this season, too! I realized early that sports were a great way to connect with my grandfather, dad and eventually teammates, coworkers and friends. I really think there’s something special about feeling like you’re part of something bigger than you are.

Q: What is your favorite team and why?
A: My Boston University Terriers, of course. Some of my favorite college memories revolve around hockey games and road trips.

Q: What is your favorite “chillaxing” activity?A: Getting in my “cozies” (aka sweats), reading my favorite blogs, baking, catching up on my DVR or painting my nails. But really… anything in my cozies 🙂

Q: What is your favorite physical activity?
A: Without the “exercise” label, I’d say walking around and exploring a new city. Some of my favorites are Boston, New York, Chicago and LA. Exercise-wise, probably interval walks/jogs/runs – I get bored doing the same thing for a long period of time, so I like mixing it up.

Q: What is one thing that you’re looking forward to doing this week?
A: Seeing some very special visitors from out of town and participating in a big pot luck at work!

I received this email from my best friend, Joanna today with this photo attached (the photo is a little wierd-its only showing up half on my computer)… Anyway, I never asked her to write anything about food, her experience with food, me being her coach. Never. She was just inspired. So, I decided to post it to inspire you, too! It definitely brought a tear to my eye!

As I sat down to eat my lunch today (brown rice cakes with FAUX gras- lentil pate, not to be confused with FOIE gras!) I couldn’t help but smile. Who knew that the little girl who was known for her snack drawer who ate hostess cupcakes and sour cream and onion pringles would end up being so health conscious? Well, I was lucky to find myself seated next to Arielle Fierman in the cafeteria back in Kindergarten. Even then she had a pb&j on “brown” bread with carrots and celery sticks as a snack. Although she would covet my cupcakes and bologna sandwiches, we are both lucky that she started out this way.

I was inspired to write something because I am grateful every day for Arielle (and not only because she is my best friend) because as a Holistic Health Coach she has inspired me to makeover my eating style. A graduate of Integrative Nutrition, Arielle’s solution is not to diet, cut carbs, count calories or points, eliminate food groups, or follow a prescribed diet. Instead, she taught me how to understand food as the fuel that I am putting into my body and to make it function. Your body is your only vessel. You are born with one and you don’t get to trade it in for a newer model. If you want to feel good and be healthy, then you very simply need to eat food that is nutritious and healthy. Foods, like fruits and vegetables, whole grains, like quinoa and brown rice, are directly from the earth so they are full of vitamins that nourish your body. They give you more energy and quite simply leave you feeling lighter, happier, and more fulfilled. So much food (even though the label might say “All Natural”) is processed and stripped down that by the time it is packaged you are getting very little of the original, main ingredient. For example, once bagged and shipped out Lays Potato Chips should hardly be called “potato” chips.

Arielle has taught me that I can eat what I am craving by simply finding the natural, simple solution. I’m a big french fry and potato chip person. Instead of buying chips I will cut up some sweet potatoes, throw on some olive oil, sea salt, and pepper and broil them in the oven until crisp. I find that I’m not depriving myself of taste (in fact they are delicious) but instead, satisfying a craving while eliminating all of the chemicals and unnecessary additives. I feel fulfilled and my craving is satisfied. If I open a bag of processed chips I’ve become aware that I end up feeling lethargic and even hungrier so I end up on a snack spiral.

I also happen to be a chocolate lover. I used to eat Twix, Snickers, Reeses Peanut Butter cups, Chips Ahoy, you name it. Arielle taught me about different options that have much better, more natural ingredients but provide me with the same sanctification minus the chemicals and added sugar. Now when I crave a little something sweet, I buy Late July cookie sandwiches or a pack of Justin’s dark chocolate peanut butter cups. I also always keep a bar of dark chocolate (70% cacao content or higher) in my refrigerator. One piece dipped in a bit of almond butter is enough to satisfy my craving.

Arielle has educated me about the importance of reading ingredients, incorporating more vegetables and simple, unprocessed foods so I have become hyper aware of what I eat and make smart choices not only because I want to maintain a healthy weight but more importantly because I want to FEEL GOOD.

Thanks to Arielle I was also inspired to do a cleanse (yeah Julia Argenti of Lemons and Loafers!). The cleanse helped me learn what my body needs and what it doesn’t need. It’s an amazing experience to really become aware of how food affects your body. I know now what foods make me feel good and how to listen to what my body is craving. While my physical health has of course improved (one green juice at a time!) I feel balanced, more energized, and clear headed.

I decided to write this because I wanted to share my experience and because I know that if I have had this experience many others will be inspired to make changes in their life too.

The New Amsterdam Market is usually held from 11am to 4pm on Sundays at the old Fulton Fish Market on South Street between Beekman Street and Peck Slip (just blocks from the South Street Seaport).

This coming Sunday, December 18th is the last Sunday and then its closed for the season so check it out this weekend! It’s a fun afternoon activity and mostly all of the subways stop a few blocks away.

This is what I ate: Five Spice Squash with Fresh Ricotta Sandwich from I8NY. It was melt-in-your-mouth delicious and the owners were very cute and friendly!

Remember- the last day to check it out is this coming Sunday, December 18th. Highly recommended! Come hungry and thirsty and bring your own recyclable bags. Not only is there home-made kombucha, they sell fresh local veggies, breads, raw honey, pies and more!

Wellness Wednesdays: Snackers Seedlander Crackers!

We had these Doctor Kracker Snackers – Seedlander Crackers for snack today at work and they were SO delicious and crunchy…AND, best of all, I approve of the ingredients!

Can’t wait to introduce them to my mom- she LOVES crunchy snacks, especially crackers, so have a feeling she’ll love these. Very hearty and made primarily of spelt- a great alternative to other type of flours.

Behind the Scenes at Be Well with Arielle!

I created and designed the first iloveme ring by hand while taking a jewelry class in Florence, Italy…

Fast forward a few years, now I have an iloveme collection – filled with many different styles (rings, necklaces and earrings), different options of organic freshwater pearls (white, black and pink) and now even a choice of diamonds and precious stones (white and black diamonds and pink, orange, yellow, blue, purple sapphires and green garnet)! Because of the overwhelming love for them, it would be impossible for me to make every single one by-hand. So, I needed to reach out to a Caster to actually melt the metal into a mold, a Stamper to make the “i love me” stamp, a pearl vendor, a diamond vendor, a precious stone vendor, an Electroplater and a Manufacturer to help assemble them. This is where my friends at Perma Glow come in!

Here’s a little behind-the-scenes glimpse into the life of Be Well with Arielle and the iloveme collection! These are my smiley friends/workers at Perma Glow who help manufacture my iloveme rings, necklaces and earrings.

One of the most valuable things that I’ve learned from being an Entrepeneur, is that relationships are key to EVERYTHING. I have a BEAUTIFUL Be Well With Arielle silver, white freshwater pearl iloveme ring. I also have a GORGEOUS silver, freshwater pearl iloveme necklace.

Q: How often do you wear your ring, necklace, earrings?
I wear my ring EVERYDAY. Some days I wear the heart pointing in to bring me love and sometimes pointing out to give the people around me love. My intuition tells me what needs extra ENERGY that day. When I need that extra, special dose of energy I wear my necklace as well. It’s when I want to sparkle and shine!

Q: What is one word that describes how the iloveme ring/earrings/necklace makes you feel?
SUPPORTED. It is that gentle reminder to Love myself. I love me 🙂

Q: What is one thing that you look forward to seeing/doing/tasting everyday?
Seeing my little boy, Zachary, who is 6 years old the minute he wakes up in the morning. His smile makes me melt.

Q: What is one trait- personality, emotional or physical feature that you love about your yourself?
I love that I am a mother. There are so many traits a mother has. If I had to pick one trait as a mom that I feel I am is determined. I WILL do whatever I need to do to help my son.

Q: What is your purpose in life? What drives you?
To be the best mother I can be. I am currently a student at IIN and one of my main goals is to help parents and mothers with ways to feed their children healthy, nutritious meals and snacks. My son was diagnosed with PDD ( a mild form of autism) when he was three. He also had severe speech delays. Through changes in diet including a gluten free diet, he is now mainstreamed and no longer carries a diagnosis. I truly believe changes in diet can create miracles. Q: Whats your favorite form of meditation, prayer, relaxin technique?
I meditate before I go to bed, I pray for everything I am grateful for. In the morning, I set my intention for the day. Pray for a beautiful day.

Q: Where do you live and whats your favorite thing about where you live? What makes your neighborhood special?
I live in Westchester County, NY.There are so many quaint, gorgeous towns and villages. I live near the harbor. Love that I can sit on a bench and look out into the water. Cool shops, great schools, and fantastic restaurants.

Q: What makes you feel beautiful?
Confidence. When I feel good about myself it shows through. When I don’t feel good or I am focusing on the negative that shows through as well. I remind myself day in and day out what I like about myself. I love my lips. I used to HATE my lips. In school, kids used to make fun of me for having “big” lips. Now, people pay a lot of money for bigger lips. Mine were free! LOL!

Q: What is your favorite dish to make?
I love sweet brown rice with black beans, some onions, cilantro and a little scallion on top. YUMMY YUM YUM!

Q: Who is your favorite musical artist and why?
I WORSHIP MADONNA. Ever since I was about 9 years old. From the lace gloves, to the red lipstick, to the etherial hair. Every aspect of her is fabulous. Ray of Light is the BEST album ever. So spiritual and soothing but also so fun to dance to. I can go on forever about her…..I treated myself to 3rd row seats to her concert a few years ago. I cried the whole time!

Q: What is one thing that you’re looking forward to doing this week?
Getting into the holiday spirit. Once Thanksgiving is over, it’s like a tis the season’ switch gets turned on. I am all about holiday music and the smell of pine. Happy Holidays everyone!!!!

I took a trip to the farmers market this past weekend…and followed my advice that I always give my clients… I bought something new that I had never made before: SUNCHOKES.

The farmer told me to make them as I would potatoes. I usually like my potatoes with a little olive oil, garlic and roasted (or broiled) in the oven, so that’s exactly how I made them! It was SO easy to make- they were done in 15 minutes, and they were delicious! Nice alternative to potatoes.

...just wash and SCRUB, no need to peel.

BTW- you can also slice them the long way so you have more like thin strips.

…then put in oven on HIGH broil or BAKE and they’re done in 15- 20 minutes!

– 2- 3 sunchokes per person
– 1-2 cloves of garlic (chopped or minced) per person
– 1 TBS Olive Oil per person
– 1 tsp Sea Salt per person
– Garlic Powder, rosemary, thyme (optional)

DIRECTIONS:
1. Preheat the oven to 425 degrees or on Broil (High)
2. Scrub the sunchokes under cold running water and slice 1/4-inch thick, either horizantally or vertically (into coins or strips).
3. In bowl, drizzle olive oil, garlic and salt on top of with sunchokes until sunchokes are lightly coated.
4. Add the coated sunchokes to a roasting pan or baking sheet. (Add optional rosemary, thyme on top)
5. Bake/Broil for 15 to 20 minutes, until the sunchokes are tender inside, like a potato and a little brown on top.

Perfect addition to the Thanksgiving Dinner table and just a perfect addition to any ordinary dinner.

I love being around her, because she reminds me that life doesn’t need to be so serious. She is a VERY busy woman, but ALWAYS manages to have a smile on her face, not to mention, perfectly shiny red, blown-out hair. Just being around her puts you in a good mood. I swear.

Q: How often do you wear your ring, necklace, earrings?
I wear my iloveme ring every single day, since I purchased it. I very rarely forget it, but when I have, I go back home to get it before heading to where I’m going. I feel off balance without it.

Q: What is one word that describes how the iloveme ring/earrings/necklace makes you feel?
There isn’t just one word- this ring is powerful. It makes me feel inspired and loved. It’s energizing! My iloveme ring is a daily reminder to me of how much love I have for myself and for others.

Q: Where have you gotten compliments on your iloveme jewellry? Any funny stories about it?
I receive compliments almost everyday. So many people tell me it’s a “cool” piece of jewelry. Then when I share with them the iloveme engraving they like it even more. I’ve run into other girls on the subway or out on the streets in New York and it’s a great conversation starter. It’s almost as if you automatically become friends when you see you both have this jewelry. When I see the girls who are wearing a piece from the iloveme collection, I know they have similar feelings, thoughts and intentions- they’re looking to help spread the love. When you love yourself, it’s easy to share that love with others.

Q: What is your purpose? aka what drives you?
My purpose is to love. My friends and family drive me. Hearing others doing well and doing great things is inspiring and motivating.

Q: What song pumps you up? Name of song and artist?
There are so many good songs out there, but Lady Gaga gets me pumped up every time. You and I and Edge of Glory are on constant replay on my iPod lately.

Q: Whats your favorite chillaxin activity?
When I have time to “chillax”, I like to read or meditate. I love writing in a journal too. It feels so good to put my thoughts and feelings on paper and into the Universe. It’s also fun to go back and read what you wrote.

Q: Whats your favorite nailpolish color? Brand and color?
Essie has two great deep red colors that I love- Poor Li’l Rich Girl and Material Girl. I also love browns right now- OPI’s You Don’t Know Jacques is a great color.

Q: Whats your favorite quote?

I love my hair. I have red hair and growing up I felt like an outcast because I was the only one with it. I didn’t have beautiful, long blonde or brunette hair. I was always picked on by the boys. I used to want to look like all of my girlfriends, but as I got older I realized having red hair was a good thing. It made me unique. I don’t want to look like everyone else. I want to stand out. I love being the one of very few females with beautiful, long natural red hair.

Q: What is one thing that you’re looking forward to doing this week?
I am looking forward to taking time for myself during this Thanksgiving week. I will have time off work and cannot wait to relax and give thanks for everything I have. I’ve worked very hard this year, and to have a few days to myself to do whatever I choose to do is luxurious!

Everyone has been getting sick recently…my friends, colleagues AND my sweet baby 1 year old nephew, Evan.

I have not gotten sick yet, and of course, I don’t plan on it. But, as I always do when everyone around me isn’t feeling well, I do whatever it takes to prevent getting sick…which includes taking vitamin c, echinacea, zinc, getting more sleep and eating the soup below!

Before my nephew, Evan was born, I bought my sister the book above, \"Perfect Health for Kids\" by Dr. John Douillard.. It was recommended to me by a pregnant woman (and mother of two) who was working at the Kripalu book store. My hope was that my sister and her husband, who actually happened to be raised on organic foods, would raise their kid holistically… and that, they certainly are.

So I was very happy when I called my sister this morning and she told me that she stayed home from work today to nurse her baby back to health. I was even more happy when she told me that she was making a soup from the book I had gotten her- filled with mung beans and turmeric. Yay and yum!

Lucky me, I was planning to go to my sister’s tonight, anyway. I’m at their house babysitting while Evan is sleeping and while they’re out celebrating my brother-in-law’s 35th birthday!

So, going to eat this for dinner and of course, needed to share it, so you, too, can prevent your fall-winter cold AND/OR treat your your body well. (I just heated it up and had a taste and it is DELICIOUS).

As John Douillard calls it, it is a “SOUP TO IMPROVE DIGESTION AND CURE COLDS”. He writes, “many illnesses in children are caused by weak or sluggish digestion…this soup is easy to digest and can be eaten at any time of the year by any kid-type. It is a perfect source of easy-to digest proteins that are needed to help a child [a pregnant woman, nursing mom, the elderly and everyone in between) recover from a cold, flu, or stomach virus.”

SOUP TO IMPROVE DIGESTION AND CURE COLDS

1 cup split yellow mung beans (found in health food stores and Asian, Middle Eastern, or Indian food stores)
2 cups white basmati rice
1 in fresh ginger root, chopped
1 sm handful of fresh cilantro leaves, chopped
2 tbs ghee (clarified butter)
1 tsp turmeric
1 tsp coriander powder
1 tsp cumin powder
1 tsp whole cumin seeds
1 tsp mustard seeds
1 tsp sea salt
1 pinch of hing or asafoetida
7-10 cups water
Bragg Liquid Aminos (optional for flavor or salt subsitute)

DIRECTIONS:
1. Rinse beans and rice together until the water runs clear.
2. In large pot on medium heat, mix:ghee, mustard seeds, turmeric, hing, ginger, cumin seeds, cumin and coriander powder. Stir together for a few minutes, lightly sauteing the spices.
3. Add rice and beans and stir again until they are coated with spices and ghee.
4. Add water and salt and bring to a boil.
5. Boil for 10 minutes.
6. Reduce heat to low, cover the pot and continue to cook until rice and beans become soft (about 30-40 min)
7. Add cilantro and optional liquid aminos just before serving.

Looks more like mush, than soup, but really tastes delicious. Definitely needs the Braggs Liquid Aminos.

E: I heard about the gorgeous Arielle and her business, Be Well with Arielle, through the amazing Gabrielle Bernstein. Gabrielle is a mutual friend and mentor of ours.

Q: What attracted to you to the iloveme ring/why did you buy it?
E: I first noticed the iloveme ring on Gabrielle’s hand. I was drawn to it immediately because its so unique yet simple and classic. After I first noticed the ring it suddenly felt like I was seeing it everywhere, on the hands of all these fabulous women I was meeting. Finally I met Arielle and heard the story behind the ring. After I understood the meaning behind this amazing jewelry I was all the more drawn to it and I had to have it.

E: My life’s purpose is to serve others. My means of serving others is by becoming a teacher. Currently, I’m pursuing a dual Masters degree in elementary education & special education at Bank Street College of Education. When I complete my degree I plan to work in an elementary school within at risk neighborhoods and underserved communities in New York.

E: I get compliments all the time on my iloveme ring. People always seem to notice it. Friends, family, co-workers and classmates have all commented on the ring.

E: I am totally, completely obsessed and addicted to Soul Cycle. This indoor cycling class changed my life. E: We Found Love by Rihanna somehow never ever gets old to me and gets me going every time. Also, Paradise by Coldplay and Shake it Out by Florence + the Machine make my soul shine.

E: This weekend my parents, brothers, sister-in-laws and my boyfriend are going to Sunday brunch uptown and then going to the dog show at the Javits Center. Oh yes, I said the dog show.

This past Sunday, I attended/worked at the Institute for Integrative Nutrition (the nutrition school I went to) “Rock the Ripple Effect” Conference here in NY! I even helped unveil a new surprise to the students!

As always, the room was filled with amazingly powerful speakers and inspiring students and grads, so I didn’t feel too, too bad about missing the excitement of the NYC marathon.

Brussels Sprouts with Honey Roasted Peanut Sauce

I’ve been craving Brussels Sprouts with Peanut Sauce ever since I ate it with Erin Frankel at Souen.

So, I bought brussels sprouts (there are gorgeous ones at the Farmer’s Markets now) and decided to give it a twist. I used to be obsessed with honey roasted peanuts so made this..

Brussels Sprouts with Honey Roasted Peanut Sauce

INGREDIENTS:
1 lb Brussels Sprouts
3 Tbs Crunchy Peanut Butter
2 Tbs Honey (local and raw is the best)
3 Tbs Tamari (or soy sauce)
1 Tbs Peanut Oil
1 Tbs Toasted Sesame Oil
Scallions (optional)

DIRECTIONS:
1. Slice off ends of brussel sprouts and slick in half.

2. Blanch in boiling water for 1-2 minutes.
3. Drain.

Blanched and drained and ready to be sauced!

4. Mix up peanut butter, peanut oil, toasted sesame oil, tamari and honey bowl.

5. Transfer brussels sprouts into baking pan and pour honey-peanut mixture on top. Mix until all slices are coated.

7. Roast in oven at 350 degrees for 10-15 minutes or until tender.
