Letter from an inspired Health Coach in NY!

On a similar note to yesterday’s post, I received this message via Facebook yesterday and it made me so happy, I just had to share it…

It ends up that my website (and blog) inspired someone to enroll into the nutrition school I went to (Institute for Integrative Nutrition (IIN)) and now SHE is on her way to becoming a Health Coach and starting up her own Health Coaching biz, too – how AMAZING is that?!

Here’s the message:

To make a long story short, I moved to NYC 1.5 years ago and had no idea where to go, what to do, or how to live. By the miracle of all miracles, I stumbled on your website. Ever since taking a coconut cooking class with Myra Kornfeld a few weeks ago, I’ve been chopping lots of coconuts, drinking lots of coco water and cooking with lots of coco milk and coco oil. I also have even slathering coco oil on my face every night before I go to bed!

It’s def one of nature’s best kept secrets because it’s good enough to put in your body AND on your body*…healthy AND healing AND moisturizing AND anti-bacterial AND delicious!

iloveME Mondays: Meet Beth Brodsky

Meet Beth…one of my Life Savers! She’s a Lawyer and a Professional Organizer (member of NAPO – National Association of Professional Organizers).

Beth came over to my NYC apartment last month and gave me a 2-hour consultation on what I needed to get rid of, tips on how to maintain cleanliness and recommendations for tools to help me stay organized.

I am so grateful of Beth’s patience and expertise. Through the years, I’ve learned about the importance of living in a clear, clutter-free space. The more clean, organized and pretty the space you eat, sleep and live in is, the more clean, organized and enjoyable your life will be. Sometimes you just need a refresher course and that’s exactly what Beth did for me…

Room to room, one shelf and shoe rack at a time, she literally helped me organize my apartment (and life). I still have yet to hang my necklace organizer and purchase a rack to station all of my mail, but since she came, I’ve been definitely sleeping better…and picking out my clothes every morning has gotten so much easier (and more fun) too!

For the closet: shelf dividers to keep the piles from falling into each other
For the kitchen: under-shelf baskets double your storage space

Q: Whats a good tip for living an organized and balanced life, without being too “OCD”?
Don’t get too bogged down in the small stuff. If you need to leave some dirty dishes in the sink for an extra day its no biggie… go out and have fun- the dishes will still be there when you get home.

Being a Health Coach (and an Auntie)!

As a Health Coach, I’m always looking for ways to intertwine “happiness” and “wellness” into all aspects of my life. Lately, I’ve been finding creative ways to incorporate wellness and happiness techniques into my nephew’s life (he’ll be turning 14 months next week).

Wellness Wednesday: Kabocha Squash

One of my favorite restaurants in NYC is Souen. They put Kabocha Squash in a lot of their soups, salads, steamed plate, etc. I LOVE it everytime that I go, and I knew it was a winter squash, so I made it my mission to pick one up during my last visit to the Farmer’s Market.

The Kabocha Squash I bought looked like a greenish pumpkin with a bright orange flesh on the inside… and tastes sweet. Kabocha is high in vitamins A and C, beta-carotene and fiber.

All I did was washed and scrubbed it a little, then sliced it into wedges, scooped out the seeds, steamed it and sprinkled a little sea salt…simply and easy and it tasted SO good.

Whenever you cook root vegetables, like carrots and squash, they become sweeter. In fact, those times that you find yourself craving sweet things, try having a sweet vegetable and you may find that your sweet cravings subside. A carrot juice or a bowl of steamed kabocha squash are perfect sweet, uplifting and satisfying snacks. (Not to mention, they’re high in fiber and vitamins!)

Ingredients:
Kabocha Squash
Sea Salt


1. Cut kabocha squash in half.
2. Scoop out the seeds.
3. Slice into wedges.
4. Steam until soft.
5. Sprinkle with a little sea salt.
Voila!

Back to Souen… the reason why I love it here so much is that I can literally choose anything on the menu and 1- ill probably like it and 2- I know I will walk out feeling full, yet light and satisfied! Souen is considered an organic and “macrobiotic” restaurant, which means, they prepare food simply and naturally, offering high quality grains, beans, and produce. No refined, chemicals, preservatives, meat or dairy products are used in their kitchen because their mission is for people to eat well so they may heal and live an enjoyable, harmonious life.

I’ve eaten there alone, picked up take-out, gotten a fresh juice, been with my girlfriends, and have even gone there on double dates with my boyfriend and his friends! There a few locations around the city, including East Village, Soho, and Union Square.

Try it- Souen (and the kabocha squash recipe)- you’ll thank me!

One of my favorite things to do is roam the Union Square Farmer’s market on a Saturday, especially when it’s nice out. Well, this past Saturday was one of those days…just gorgeous. Everyone else in the city I guess thought the same thing because the market was PACKED. So, I quickly picked up a few items that I had never tried before: Watermelon Radish and Black Radish, and left!

The black radish was pretty ugly looking – very black and round- looked like a turnip but the farmer was giving out samples and it tastes creamy with a crunch.

The watermelon radish wasn’t too pretty, either, but I once saw it cut open, I knew I HAD to try it. It also resembles a turnip/larger radish, round and sort of green-brown on the outside with a bright pink-red watermelon color on the inside. Tastes nothing like a watermelon, but it’s literally one of the most gorgeous veggies out there. See below:

I have the iloveme ring with the “Rocker Metallic” Black pearl – it’s an awesome dark green color! It was true love at first sight.

Q: What attracted to you to the iloveme ring/why did you buy it?
I saw it on the hand of the beautiful Arielle herself, and was smitten.

Q: How often do you wear your ring?
I wear my ring pretty much daily! I’m always a little bummed when I forget to put it on before leaving the house. Just a glance at it reminds me to think and act with more love.

Q: What is your favorite condiment?
Ooh – that’s a tough question – I seriously love almost all condiments! I think I’ll go with hot sauce. Cholula brand. I also love a good quality coarse sea salt. And lemon juice!

Q: What is your favorite healthy snack?
Mmmm…. for a savory snack, lately I’ve been liking brown rice crackers with homemade hummus. And kale chips, of course! For sweet snacks – green smoothies, raw chocolate or dates. Dates are like nature’s candy!

Q: What is your favorite “unhealthy” snack?
I love tortilla chips with guac. That’s not so unhealthy, but it feels like a party food. I’m a sucker for good chips and guac.

Q: What is your favorite bed-time regimen? (How do you get ready to hit to sack? Any products you can recommend?)
Lately I’ve been using Sprout Skincare products on my face at night, which I love! Their makeup remover and toner are awesome, and totally natural. I also love sipping on a calming herbal tea and reading before bed.

Q: What is one trait- personality or physical feature that you love about your yourself?
Although it can be a blessing and a curse, I love being a Virgo.

Q: What is your favorite social media secret/tip?
Get more quality followers/fans organically by posting helpful, authentic, great stuff!

“Healthy” Nail Polish

If you know me well, you know that I LOVE nail polish. In 7th grade, I even did my science fair project on nail polish – why lighter colors stay on longer than darker colors. Rarely, will you see me wearing a light or nude color on my nails…and (hardly) NEVER will you see my nails bare (yes, i know they need to “breathe” once in while).

My thoughts on nail polish: the more colorful, metallic and sparkly, the better! It brightens up my week and makes my hands look prettier and more feminine. I love getting a manicure but I actually like giving myself manicures too – paired with a cup of tea and a candle…and Housewives of Beverly Hills, it makes the perfect evening activity!

Lately, I’ve been digging this as my base coat:

I figure at least if the base coat is free of Toulene, Formaldehyde AND DBP, it’s better than all three coats chemically-coated, right?! Also, it’s a “2 in 1” Base Coat so it acts as Base Coat and Top Coat!

I bought these specific ones at Whole Foods and some Natural Food Stores have this brand and other chemical-free nail polish brands that you can try…

Don’t get me wrong, I still LOVE Essie and O.P.I, but organic nail polish is def better for our us, and they do have pretty cool colors, like Skyline Blue and these colors.

Bring-in-the-New-Year with Rainbow Chard Salad!

I love kale…and I also love escarole and spinach and other raw greens in my salads but lately I’ve been getting a little bored AND Whole Foods didn’t have any kale left the other night, so it was time to put on my thinking cap, get creative and experiment!

I’ve never eaten Chard raw but the Rainbow Chard was calling my name…fresh, dark green and leafy and GORGEOUS red, orange and yellow stems and the produce guy said I could eat it raw, so I listened to him. Glad I did.

I usually steam it, or sautee it, but this time I just chopped it up and made it into a raw salad…DELISH, SO COLORFUL and GORGEOUS!!!

A great alternative to kale. Tasted great, was really hearty and crunchy…and leafy greens are known to be high in calcium, iron, protein, fiber, vitamins. They also help cleanse your blood and strengthen your immune system, so I felt GREAT afterwards.

healthy homemade coffee creamer by arielle haspel

Ever since I started drinking
coconut milk egg nog in my tea
for my AM treat over the holidays,
I’ve been craving creaminess every morning.
I’m still craving it, actually!

I almost went out and bought a coconut milk creamer
this morning from the supermarket downstairs…

…when I realized,
I can concoct my own “creamer” in my kitchen!
DIY (Do It Yourself) is not only an amazing money saver,
it can make you feel better and look better too.

Chemicals, additives and sweeteners does NOT do a body good.

This recipe tastes SO delicious, SO creamy, perfectly SWEET and it made me feel SO much better than
a soy processed creamer would’ve made me feel.

Here’s how I made it:

Home-Made Coconut Almond Creamer
Ingredients:
– 1/4 cup organic coconut milk
– 1 tsp organic almond extract (or hazelnut, peppermint, coconut)
– 1/2 tsp organic vanilla extract
– 1 tbsp organic coconut palm sugar

Directions:
1. Make your coffee or tea as you normally would.
2. Blend ingredients above and pour over coffee/tea.
3. Whip it up with this Aero Latte Frother if you want to get really fancy or love froth like me! Add it to your coffee or tea.

It’s so fun to experiment! Try it! You can also try it with other extracts, like Hazelnut or Coconut extracts (yum!).

– toasted sesame oil + tamari + lemon juice + minced ginger + raw honey and/or orange juice
– French dressing: Organicville ketchup + Vegainnaise + sweet relish

Meet Clarisa Mompremier…I receive her monthly emails and they are inspiring and very positive. Not to mention, I LOVE her company’s name, “Inner Ambiance” and her tag line for her website is “let love be your interior designer”. How creative, right!?

Q: What piece of Be Well with Arielle iloveme collection do you have? Metal, Color of Pearl, Diamond?
I wear the silver iloveme ring with the pink pearl AND I am set the intention to receive the silver “Iloveme” necklace as I celebration of my 5 years of marriage. It’s the perfect gift.

Q: What attracted to you to the iloveme ring/why did you buy it?
I saw Gabby Bernstein (one of my fave gals and spiritual teachers) feature it in a Ford Ones to Watch Video she did about a year ago. Funny, I had never really owned a ring until I saw her wearing it, and I knew I had to have it. The design was fabulous, but the energy that it carried and symbolized was what really got me!

Q: How often do you wear your ring?
ALL THE TIME! I only take if off when I am going to be around water.

Q: What gets you up in the morning?
I get up to have fun! I always wanted to be like Peter Pan and never grow up. I love doing what I love, blogging, coaching, watching football with my hubby, playing with my doggy, shopping with my girlfriends, and many more fun filled activities. Seriously, if it’s not fun I refuse to engage. I am pretty stubborn about it. So if it is not fun, I ask for a shift in my perception. That helps.

Q: What is one success that you can brag about? (bragging about yourself helps to inspire others!)
I love that I resigned my secure, well paying job with benefits, insurance, the works… to do what I love. I am a free spirit, and listening to my heart and giving up stability and security felt REALLY GOOD!

My intuition said that my freedom would serve the world in a big way, so I listened. I love being a coach, a writer and a teacher. I am ready to help, heal and serve in 2012!

Q: I know you’re really into spirituality. What got you into it?
I feel I have always been spiritual. Ever since I was a child and went to church, I strongly resonated with messages of unconditional love and kindness. I found the judgmental, narrow minded “you are going to burn in hell” messages never really stuck or felt good to me.

As I grew up I left organized religion behind, and FULLY embraced my own version of spirituality. My life became filled with buddhas, meditations, candles, New Age books, “A Course in Miracles” and whatever else felt good and authentic to me. I still kept the good stuff I learned through religion such as love, but honestly it’s been so much fun discovering my own personal understanding of God.

Now I live every day connecting to this “higher power” of my understanding. I feel my dharma, my purpose is to help others create their own spiritual relationship and journey.

Q: What is your favorite book?
Eckhart Tolle’s, “New Earth” changed everything for me. But right now I am in love with, Gabby’s, “Spirit Junkie”. I just look at the cover and it makes me happy. I believe it’s the authentic energy of her story that is magnetic. I can’t get enough! I have bought a total of four copies for my friends and myself, and I plan on buying another copy soon for a g-friend’s bday!


Q: What is your favorite holiday?

I love Christmas. Even though I am not a Christian anymore, I still love the traditions around the holiday. I love Christmas trees, lights, presents, decorations, the colors, the candy canes, the songs, Santa, Jesus, Frosty, the Hoos and Rudolph. I LOVE IT ALL!

Q: What is your top New Years Resolution this year?
To be more ME!! I love me very much. In the past I have felt that I have been afraid to speak my truth, and be my authentic self. Now I feel it’s a MUST. The world needs us all to serve from our highest capacity and pretending to be someone else won’t cut it. My time for shyness is over!

Q: What is one thing that you’re looking forward to doing this week?
I am happy about writing my first blog for 2012. Writing more was another one of my intentions for this year.

Pure Essential Oil – Eucalyptus. Ahhhhh…..

Addicted to your cup of joe in the morning? Or didn’t get a good night of sleep? Try sprinkling some of this onto your shower floor, breathe in and get energized! Just a few drops in your shower is enough to get you ready for the day…

EUCALYPTUS: a strong and energizing aromatic essential oil with many health benefits. It’s anti-bacterial, anti-viral, helps clear sinuses, ease sore muscles and can literally make your bathroom smell like the Spa at Equinox Gyms. Ahhhh…

It’s actually been on my shopping list for a while and every time I walk into my healthfood store, I always forget to get it.

Then, last week, I saw an ad for Aura Cacia’s Eucalyptus Essential Oil in Yoga Journal Magazine. I cut it out to remind myself to put it on my shopping list… and one day later, a bottle was sitting on my desk – it was one of my holiday gifts from Institute for Integrative Nutrition. Talk about synchronicity, right?! WOW, right?!

I brought it home last night and sprinkled a few drops on the shower floor before I went to sleep. I intended for it to be an invigorating morning surprise for my boyfriend when he took his morning shower before work. As soon as he passed the bathroom last night, though, he know I was up to something! He said it smelled like a spa…I told him to wait until the morning for the ultra benefits. He ended up waking up in the middle of the night and couldn’t fall back asleep because it was so invigorating!

Guess I’ll have him sprinkle it himself in the mornings for now on!

In addition to putting a few drops on your shower floor, here are a few more ways to add Eucalyptus to your life. (I stole some of them from the ad)…

– Going away? Bring your bottle (its only .5oz). Place 7-10 drops on hotel room floor for a fresh, “home-y” scent and it’s anti-bacterial and anti-viral too!
– Muscles ache? Add 12 drops per 1oz of skin care oil (like sweet almond oil o virgin coconut oil) and massage onto muscles.
– Put a few drops into diffuser/humidifier and place it near your bed to clear out your nose. Breathe clearly.
– Combine 24 drops with 4oz water and spritz into the air to help clear your head, refocus and energize.
-Feeling stuffed up? Instead of Vicks Vapor rub, get creative and holistic and blend 1-3 drops wth 1sp sweet almond oil and rub onto chest. Relax, inhale and smile.
– Long day of running around? Add 3-5 drops to warm water and soak your sore, tired feet. Ahhhhh…
– Combine 12 drops with 1/4 cup Dead Sea Salt or Epsom Salt and place into bath and enjoy a spa-scented bath!
– Place 2-5 drops into a bowl of steaming water, place towel over your head and breathe deeply. Great way to open your sinuses, energize and clean your pores!

Breathe in. Ahhhhhh…..

Wellness Wednesday – Coconut Milk Egg Nog!

My new fave holiday treat…a dash of So Delicious® Coconut Milk Egg Nog
in a cup of Black Tea! (It’s also a delicious treat to just drink on its own, cold, in glass with ice.)

INGREDIENTS: Organic Coconut Milk (Organic Coconut Milk (Water, Organic Coconut Cream), Organic Dried Cane Syrup, Natural Flavors, Annatto for color, kosher salt, carrageenan, guar gum, locust bean gum, spices (nutmeg).

It does have sugar in it (see the ingredients above) and some “stuff” I normally wouldn’t drink, but you won’t need to drink much to satisfy your holiday sweet tooth. Just a little and your taste buds (and tummy) will be happy!

I actually prefer the soy version (Silk Soy Milk Egg Nog)- its a little more creamy, and less thick than the coconut version above, but for those who don’t like to consume soy, the coconut milk version is a DELISH option.

INGREDIENTS: All Natural Soymilk (Filtered Water, Whole Soybeans), All Natural Evaporated Cane Juice, Natural Flavors, Sea Salt, Carrageenan, Turmeric and Annatto (vegetable color).

An even better option, is to make your own Egg Nog! I haven’t had the chance to try it out yet (I was in Florida for the past few days and wasn’t craving egg nog there), but I encourage you to experiement and try out this recipe! I LOVE most of Elana’s recipes…and this recipe just looks SO YUMMY!

Vegan Egg Nog by Elana’s Pantry.
(Serves 6)

INGREDIENTS:3 cups almonds
4 cups water
1 tablespoon vanilla extract
2 tablespoons agave nectar
2 tablespoons yacon syrup
2 teaspoons nutmeg, ground
1/4 teaspoon cinnamon, ground
pinch cloves, ground

DIRECTIONS:
1.Soak almonds overnight.
2.Discard the soaking water and rinse almonds in a deep bowl of water, repeat until water is clear.
3. Place soaked almonds and 4 cups of water in a vitamix or blender. Blend on highest speed for 90 seconds.(Blend for more if in a regular blender.)
4. Strain milk through a fine mesh paint bag, discarding the solids.
5. Place almond milk in a half gallon mason jar.
6. Add vanilla, agave, yacon, nutmeg, cinnamon and cloves, then shake well. 7. Refrigerate until cold and serve.

…and drop some off at my apt for so I can taste it!!!

TGIF- Nachos!

Last night, I was craving chips, but I also wanted something HOT and spicy to warm me up (and its almost that “time of the month”, so I was craving something comforting…so I made Nachos!

YUM, YUM, YUM!

YUM, YUM, YUM!

Some ideas for you to make at home-
INGREDIENTS:
– blue corn chips
– organic mozzarella cheese (or dairy-free cheese of choice)
– pinto beans, garbanzo beans, red beans
– sliced olives
– salsa (i used hot salsa!)
– sliced jalapenos (yes, i like it hot!)
– avocado or guacamole (add once you take it out of oven)
– sour cream (or dairy-free sour cream )- add once you take it out of oven

DIRECTIONS:
-Place chips and then whatever your choice of ingredients on top into a baking pan and broil on high (far from the fire) until cheese is melted (about 10 minutes). Keep on checking just to make sure the chips dont burn.

As good as Bro Jimmys and you get to choose the ingredients so it’s SO much more healthy!

Home-Made (Coconut Oil) Popped Popcorn in 4 Minutes!

When I was younger, my family and I were HUGE fans of microwavable popcorn.

Everyday I would pop some in the microwave
after school and on the weekends, I would eat it with friends while watching
“Girls Just Wanna Have Fun”.

I even remember standing in front of the microwave as I watched
the bag expand and getting so excited when I would hear the first
“POP”!

It was so fun…until I read about the dangers of microwaves
{see below} .

Through the years, I’ve learned that making your own popcorn is so much more fun and just as easy as popping it in the microwave. It also tastes WAY more fresh and delicious.

Here’s my simple popcorn recipe:

Home-Made Popped Popcorn
Ingredients:
– 2 tbs coconut oil
– 1/3 cup (non GMO) organic popcorn kernels
sea salt (to taste)

Directions:
1. Add coconut oil and popcorn to a pot (a high pot with a heavy bottom is ideal).
2. Stir around the popcorn making sure each kernel is coated with coconut oil.
3. Set the pot over medium heat and cover.
4. Shake the pot as soon as they start to pop,
to keep them from sticking to the bottom of the pot and burning.
5. Pop for about 4 minutes, or until most of the kernels have popped (when you hear more than 5 seconds between each pop thats a sign that they’re done).
6. Un-cover, sprinkle with sea salt and voila. Perfectly popped,
delicious, home-made popcorn!

*Makes about 4 cups of popped popcorn.

P.S. Did you know? Corn and popcorn is hard to digest for some people and in some countries like Italy, corn is known to be the “food for the pigs!” You would never see corn on the cob at an Italian dinner or popcorn in an Italian’s pantry!

Wellness Wednesday – Rainbow Light Multi-Vitamins

Some swear by taking a multi-vitamin every day, others believe that if you’re nourishing your body with fruits and vegetables daily, you’re getting the right amount of vitamins and minerals and there’s no need for a supplement.

I believe that it won’t hurt…that is, if you’re taking a high quality brand and eating well-balanced meals through out the rest of the day.

Oh- and i recommend always taking a multi-vitamin with food because the vitamins D, E, K, A are fat soluble so you’re body won’t absorb it without the presence of fat.

This is the brand I choose: Women’s One by Rainbow Light. It doesn’t come up on me (no throw-up burbs) and it was recommended my Health Coach, so I’ve been taking it ever since.

Listen to your body. Take what’s right for your body.
