healthy coconut caramel crackerjacks - gluten-free and no corn syrup - made by arielle haspel of bewellwitharielle.com

If you love crackerjacks, you’re going to LOVE this recipe.

And if I told you it’s so much healthier than the traditional version,  I don’t even think you would believe me.

I took a coconut cooking class with Myra Kornfeld a few months ago with my sister and was inspired to make it at home.

Here’s the recipe:

INGREDIENTS:
2 tbs coconut oil (extra virgin or filtered)
1/3 cup popcorn kernels
1/2 rice syrup
1/4 cup barley malt syrup
1/4 cup maple syrup
1/2 teaspoon sea salt
3/4 cup raw peanuts (almonds, or pecans or any nut of choice!)
Parchment Paper

DIRECTIONS:
1. Add coconut oil and popcorn to a pot (a high heavy bottomed pot is ideal).
2. Tilt the pot to ensure all kernels are coated with oil.
3. Cover and set the pot over medium heat.
4. As soon as the kernels start to pop, shake the pot to keep them from burning.
5. Pop about 4 minutes, or until most of the kernels have popped (when you hear less than 5 seconds between each pop). Be careful not to burn.
6. Un-cover. Now, you’ve got your delicious popcorn!
7. Preheat oven to 375 degrees. Get your ingredients together.
8. Whisk together the wet ingredients: rice syrup, barley malt and maple syrup in a small bowl.
9. Toss together the dry ingredients: popcorn, salt and peanuts (or nuts) in a large bowl.
10. Pour the wet ingredients/syrup over the dry ingredients/popcorn and stir to coat evenly. (Do this slowly because it’s really sticky!)
11. Spread popcorn mixture on a parchment-covered baking sheet and bake for 5 minutes.
Then stir thoroughly. Bake for another 5 minutes, then stir again.
Bake for another 5 minutes (so 15 min cooking time in total). Popcorn should be well coated and golden brown. The sugars will be bubbly and hot.
12. Remove the tray from the oven and let sit for 10 minutes until popcorn is slightly coooled, but still sticky. Tear into clumps and place into a bowl.
13. Refrigerate for 10-15 minutes to make the syrup harden and crispy.
14. Eat and enjoy! or store in a jar or bag at room temp for up to two weeks.
(I sprinkled some coconut on top to be fancy!)
15. Voila!

Perfect recipe for a dinner party (if you’re willing to get your hands a little sticky beforehand!)…Also, a great recipe to make on a Sunday and munch on while watching reruns of Bethenny and Housewives of Beverly Hills!

Raw Chocolate Pudding Cake with Date-Nut Crust!

My dad’s bday fell on the first night of Passover, which means that he couldn’t eat anything that was leavened, like a birthday cake.

I usually feel a little bad (his bday usually always falls on Passover), but instead of
feeling bad this year, I “baked” him a delicious raw chocolate pudding cake (which also happened to be so healthy)..and I didn’t even need an oven!

Raw Chocolate Pudding Cake with Date-Nut Crust! – Great for passover and perfect for any time of the year!

Crust- raw, made of dates, honey and nuts
Filling- raw, chocolate “pudding” made with cacao, dates and avocado!

INGREDIENTS:

Filling:
5 avocados
5 dates
1 1/4 cup raw cacao powder
1 1/4 cup water
10 tsp vanilla extract
1 1/4 tsp sea salt

DIRECTIONS:

Filling:
1. Place avocado, dates, raw cocao powder, vanilla extract and sea salt in a blender.

2. Gradually add 1 tablespoon of water at a time to achieve a creamy consistency.

3. Add more avocado to make it creamier, add more dates to make it sweeter.

4. Blend, blend, blend until creamy and pudding-like!

5. Place to the side in a bowl.

INGREDIENTS:

Crust:
1 cup pecans
1 cup walnuts
1/4 cup almond meal (optional)
1 cup dates (pitted)
1/4 cup honey (use local)
1/4 tsp sea salt
1 tsp vanilla extract

Decoration:
– banana chips
– pistachios
– chocolate chips, cacao nibs,
– shredded coconut
– anything!

DIRECTIONS:

Crust:
1. Blend nuts and sea salt until flour-like consistency.

2. Add dates, honey and vanilla.
3. Blend until mixed well.
4. Spoon out of blender and place into cake pan – patting down mixture as you would to make any type of crust.

5. Place into fridge/freezer for about 10-20 minutes until mixture hardens.

6. Add pudding slowly to crust.


7. Top with decoration! VOila!

(Added a “D” for Dad in pistachios (my dad’s fave!)

Enjoy!

BBQ Spelt Matzah Pizza!

Another Passover favorite…MATZAH PIZZA!
(but with a healthy twist!)

I’ve been eating lots of whole wheat matzah, so figured I would mix it
up and use spelt matzah today…and I didn’t have any tomato sauce
on hand, so I used bbq sauce = bbq pizza – yum!

(*please note- I do not observe Passover as strictly as others, so use “kosher for passover” ingredients as needed/use caution when using my Passover recipes).

INGREDIENTS:
– matzah (1 or 2 pieces/per person)
bbq sauce or tomato sauce
– mozzarella cheese (organic, preferably)

DIRECTIONS:
– place on parchment paper/tin foil
– put in oven on broil and cook until cheese melts

Mmmmmmmm good!

Whole Wheat (and Spelt) Matzah Brie!

If you observe Passover*, I recommend munching shmurah, whole wheat and spelt matzah/matzo. In my opinion, they’re the tastiest and healthiest, and most important of all- they will keep you “regular”!

On the subject of matzah, enjoy my recipe for Whole Wheat Matzah Brie below (a Jew’s Passover favorite!)…

Ingredients:
– coconut oil
– farm fresh eggs (notice how yellow/orange mine are = fresher)
– whole wheat matzah (or spelt)
– honey (local)
– sea salt
– cinnamon (optional)


– break matzah into small pieces
– run matzah under water/soak in water to make it soft(er)
– whisk eggs in bowl
– add matzah to egg mixture and let soak

– add coconut oil to pan
– put matzah/egg mixture in pan and make like french toast!

– add honey, maple syrup, cinnamon, coconut palm sugar or whatever toppings you like!

Many people complain that the entire week of Passover always makes them constipated. Well, no wonder why! Most matzah is made of white flour! Stay “regular” with whole wheat and spelt…continue eating lots of veggies and of course, drink a lot of water to flush everything out!

Here is what I like/recommend:

– Shmurah Matzah (made locally and fresh). Look up where you can get in your neighborhood.
Streit's Whole Wheat MatzosIngredients: Whole Wheat Flour, Water.
Manischewitz Spelt MatzoIngredients: Spelt Flour, Water.

I made it just like I do with french toast. Definitely didn’t taste like my Dad’s (his is really the best!) – mine turned out a little too eggy, but we still enjoyed it!

Arielle's "Mounds" Bars!

This post was originally inspired by my friend’s love for macaroons and mounds bars. It’s also perfect for Passover (please note- I do not observe Passover as strictly as others so use “kosher for passover” ingredients as needed).

These chews are actually one of my favorite snacks/desserts to eat all year round – I make them often.

Original recipe is from Susan Silberstein’s Hungry for Health book. As you’ll see, I fancied up the recipe and dipped them in melted dark chocolate. And, to spice it up a little, I just lightly drizzled some chocolate on a few and sifted some raw cacao on some too.

INGREDIENTS:
1 1/2 C raw almonds
1 1/2 C raw cashews
1 T flaxseeds, finely ground
1/4 C sesame tahini
3/4 C honey (local if possible)
1 T vanilla extract
3/4 tsp. sea salt
1 1/2 C unsweetened coconut

DIRECTIONS:
1. Place almonds and cashews in food processor/blender/vitamix and pulse until finely chopped.
2. Add flax, honey, tahini, vanilla, coconut and salt and pulse a few times more.
3. Roll into balls or make shapes with a cookie cutter or press firmly into 9 by 5 by 1 inch brownie pan (you can cut them later).
4. Refrigerate several hours. Remove just before serving.
Voila! DELISH and easy and healthy macaroons for your Passover seder, or anytime!

Coconut Chews (bars)

If you want to get fancy, add some melted chocolate…

CHOCOLATE TOPPING
INGREDIENTS:
– 2 bars dark chocolate (preferably over 60% cacao for added benefits)

DIRECTIONS:
1. Boil water in a pan, place cut up chocolate in a metal bowl, place metal bowl over pan.
2. Keep on stirring until melted.

3. Once melted, either dip the chews in the chocolate directly, or use a spoon to drop the chocolate on the chews and then use a spatula or knife to smooth out the chocolate

I LOVE going to the zoo! 2 weeks ago, while traveling around Cali, I stopped in San Diego to visit zoo – particularly to see the flamingos, peacocks and monkeys (my faves).

Um, O.M.G…talk about AMAZING colors, patterns, noises, energy, smells, sights to be seen! Great inspiration if you’re into making jewelry, painting, designing or just living life.

Oh – and here are my hunter-green metallic nails (painted with femme fatale by Karma Organics, inspired by the peacocks!

Back in the day, when I lived in Florence Italy, I would literally spoon the Nutella out of the jar and dip it onto my tongue. Mmmmmmmmm. Chocolatey, creamy and nutty – the best combo.

But…

Deliciously decadent treats, like Nutella, don’t have to be saved for living abroad, special occasions or crepes. And, they don’t have to be THAT “decadent” if they’re made with whole, natural ingredients. Same thing, less guilt!

Taste this smoothie and you’ll never go back spooning it out of the jar…

Ingredients:
– 3/4 cup Coconut Milk (or almond milk)
– 3/4 cup Water
– 2 Dates (or 1 tbs Coconut Palm Sugar)
– 1/4 cups Hazelnuts
– 2 tbs Cacao Powder
– sprinkle Cacao Nibs on top (for crunch and decor)!

Directions:
– Add all ingredients into blender and mix!

* Serves 2

Voila! Enjoy!

I also bought one for my mother, who I know has been struggling the most through this and she needs to know that its okay and important to love herself through this very difficult time. We will both wear our rings proudly everyday in honor of my brother, and also as a reminder each and everyday day to love ourselves unconditionally. Q: What pieces of Be Well with Arielle iloveme collection do you have? Metal, Color of Pearl, Diamond?

I have the i love me necklace, ring and earrings all in silver and white pearl; the necklace actually started it as I had enrolled when IIN did a valentine’s promo and my iloveme-obssession started…

Q: How did you hear about Be Well with Arielle and the iloveme ring?
Arielle and I are both IIN alumnae, and IIN turns out the best students, as it is an AWESOME school; I think Arielle may even have even left me a welcome call when I enrolled 🙂 Then I got the necklace, looked up the website, and just fell in love with what Arielle’s jewelry stood for. It is now my jewelry of choice: all my sparklies are in the bank, but the iloveme jewelry is always with me!

Q: How often do you wear your iloveme jeWELLry?
I wear my ring whenever I feel pretty or want to spruce myself up and feel better 😉 My favorite is the iloveme necklace as it’s not too long for baby to grab!

Q: What is your favorite healthy snack?
I *love* kombucha, coconut water, and kale chips, and I recently discovered these “chokalet krispies” at Whole Foods: I’ve been eating them since my last month of pregnancy til now! Eat these yummies and drink coconut water with pulp, and I am in pure bliss!

Q: What is your favorite “unhealthy” snack?
Hehe, chocolate chip cookies…and maybe a bacon-guucamole-tomato sandwich…I love bacon and dark chocolate, just not together!

Q: Q: I know you just had a baby! what is your favorite thing about being a mom thus far?
It’s kinda crazy how protective and “mama bear” I’ve become, as well as clearer about life decisions in general. For an anal person, this is a first for me. These, and inhaling my baby’s scent as I hold/nurse him, and seeing him grow and fill out right before my eyes 🙂 Oh and standing up for mamas the world over with the choices I make– coz mamas need to be represented out there!

Q: Q: What are you most looking forward to doing with your baby when he begins to walk and talk!?
I’d love for my baby to not be so floppy anymore and not be so dependent so I can take him places, read to him and see his face light up, have him answer me when I talk to him…I’d love to see who he resembles most, too 😉

Q: What is your fave way of taking care of yourself now that u have another person to take care of?!
Postnatal exercises while he naps, green smoothies, staying connected with the outside world via Internet, and dry brushing as well as using my clarisonic– all before it’s feeding time again! I look forward to adding “eating out”, “watching movies” and “going to the salon” to this list soon!

Q: What is one thing that you’re looking forward to doing this week?
Postnatal exercises (they totally improve my mood!), making more Dandy Blend experiments (tastes like coffee, but safe and even beneficial for mama AND baby!), and meeting fellow mamas at my first La Leche League meeting! Then maybe my blog post for the week…!

“Krunchy” Kohlrabi!

Went to the Union Square Farmer’s market on Saturday, and as always, I purchase something that I’ve never tried before.

This Saturday’s experiment: KOHLRABI.

Can be eaten raw or cooked.

I chose to cook it (with a little bit of olive oil, sweet onion and sea salt.)

It’s apparently a cross between a turnip and a cabbage and high in vitamin C, potassium and fiber.

Makes a great side dish and part of an entree! Oh so easy to make..and oh so yummy!!!

(Sort of looks like tofu when it came out of the oven, right?!)

Ingredients:
– kohlrabi (sliced)
– sweet onion (chopped)
– olive oil drizzled on top
– sea salt to taste


– cut kohlrabi (i sliced it into thick chunks and sliced off the hard skin)
– chop onion
– drizzle olive oil
– sprinkle with sea salt
– broil on high for about 7 min on each side until brown and crispy

Tasted sort of like cabbage, but had a harder(ish) consistency. Looks kind of intimidating when you see it at the farmers market, but comes in pretty colors – green or purple and it’s easy to make! Try it!

Chewy and so, so sweet…

When you’re craving something chewy and sweet (like a brownie) have 1 date and I promise that you will be a little satisfied. Chew it well, savor it. Take a sip of water. Are you a little more satisfied? Maybe have 1 or 2 more and I’m sure your sweet tooth will subside. Easy as that.

Add in a raw almond for a bit of crunch, and crunchy, sweet AND DELICIOUS!

The great thing about dates is that you can eat them alone, add them to home-made granola, AND they make the perfect sweetener for smoothies.

I apologize in advance, as I’m not a blogger. I don’t so much as “tweet”! Still, I want to share my iloveme ring story as it’s been years in the making.

While I’m not much of a writer, I’m definitely right side of the brain dominant. I channel my creativity in other ways. For instance, I love to cook and concoct healthy dishes. Years ago, while scanning the pages of SELF-magazine, primarily for recipes, I came across an inspirational article written by NYC and beyond renowned life-coach, Gabriel Bernstein. I was somewhat familiar with Gabriel since a few months earlier, while browsing the self-help section at Barnes & Nobles, I had stumbled across her book, Add More ING to your Life. I was 23 years old and going through a difficult divorce, which stirred up suppressed anguish from my Fathers passing away just a few years prior. The glossy image of Gabriel coinciding with a featured collection of her favorite things included the iloveme ring. I couldn’t take my eyes off of the shiny accessory.

I went online (became completely fascinated by the website: www.bewellwitharielle) and ordered the ring for myself. Unfortunately, there was a PayPal glitch and my ring never arrived. At the time, I decided I couldn’t really afford the ring, so it was probably for the best.

[Two]-years later, my sweet boyfriend (who was brainstorming what to get me for my birthday) recalled a conversation a few weeks before about a recipe I’d found on Arielle’s blog. I must have mentioned my forsaken ilovemering because it became the best, most thoughtful birthday gift I ever could have wished for. I truly love the ring…almost as much as I love my boyfriend! Emotionally, I’m in such a healthier place now and when I look at my ring it symbolizes a much happier state of well-being.

Putting lots of love and energy into…

Just got back from beautiful California so pardon my lack of posting…

been putting lots of love and energy into fulfilling orders!

I also put a lot of love and energy into every iloveME ring, earring and necklace, every detail, every shipment, everything I do…so it’s tough for me to take care of myself, my business, work, AND post on my blog.

That being said, just thought would fill you in…

Home-Made Maryland-Style Crabcakes

Last year, I received an invite via email to participate in a recipe exchange and this was the recipe I received. So glad, because I would’ve never thought of even making crabcakes (they seem like such a “restaurant” food!

The deal is: the email lists two names and email addresses. You send your favorite recipe to the person whose name is listed #1. After you send the recipe to that person, you copy/paste the email, move the person listed as #2 to be listed as #1 and then put your name as #2. Sort of hard to explain but you end up getting loads of amazing recipes.

Here is the recipe that recieved from Lisa Havlik (my sister’s former colleague who is now a Yoga Instructor in Denver!)

I usually always try to find alternatives/add my own spices, etc, but this time I just used the recipe, as is (with a couple of exceptions noted below).

Made these for my boyfriend for V-day (he once told me it was one of his favorite foods). And we ate them while we played Connect 4!

INGREDIENTS:
-1 lb. jumbo lump or backfin lump crabmeat, fresh or pasteurized
-1 large egg
-1/4 cup vegannaise (recipe called for mayonnaise)
-1-1/2 tsp. Dijon mustard
-1-1/2 tsp. Old Bay seasoning
-1 tsp. fresh lemon juice
-1/2 tsp. Worcestershire sauce
-1/4 tsp. sea salt (recipe called for Kosher salt)
– 12- 15 Ritz crackers (I used organic, of course. for a healthier option, try rolling in almond meal)
– 1 Tbs. chopped fresh flat-leaf parsley
– 2 Tbs. unsalted butter
– 1 Tbs. olive oil
– Lemon wedges for serving

DIRECTIONS:
-Drain the crabmeat, if necessary, and pick through it for shells (jumbo lump will not have shells).
-Put the crab in a medium mixing bowl and set aside.
-In a small bowl, whisk the egg, vegannaise/mayonnaise, mustard, Old Bay seasoning, lemon juice, Worcestershire sauce, and 1/4 tsp. salt.

– Scrape the mixture over the crab and mix gently until well combined. Gently break up the lumps with your fingers but do not overmix.
– Sprinkle the parsley over the mixture, and mix in thoroughly but gently; try not to turn the mixture into a mash—it should still be somewhat loose.

– Cover with plastic wrap and refrigerate for 1 to 3 hours. (This is important as is gives the ingredients time to bind.)
– Shape the crab mixture into 8 cakes about 1 inch thick.
– In a separate dish (I use a large plate), crumble the crackers, as you will use them to roll the cakes in. (I used a blender to crumble them)

PAN:
– In a 12-inch nonstick skillet, heat the butter/olive oil over medium heat. When the butter is frothy, add the cakes to the pan (8 should fit comfortably). Cook until dark golden brown on the underside, about 4 minutes. Flip the cakes, reduce the heat to medium low, and continue cooking until the other side is well browned, 4 to 5 minutes.



OR
OVEN:
– Place on parchment paper (or in cupcake pan like me!) and broil for about 7-9 minutes in oven until brown and cooked through.



– Serve with lemon wedges on the side for squeezing over the cakes.
– Voila! Enjoy!

As you can see above, I tried both recipes and they both turned out really well but REALLy different!!! It was as if they were two different recipes. I liked both so make whichever one sounds more delicious and easy to you!

Both tasted as if I was eating in a restaurant and they were pretty easy…and very fun to make.

I made roasted potatoes and winter zucchini fries as side dishes- perfect complements.
