As a follow-up to yesterdays Cinnamon-Sugar French Toast Sticks post and my obsession with coconut, I decided to make french toast sticks again but this time topped with with layers of fluffy shredded coconut! Great addition to the Sunday brunch table – you’ll really be sure to impress your guests!
Here’s what I used and how I made it:
Ingredients:
– 6 slices of Bread (I used fresh egg bread/”challah”. Use bread of choice)
– 2-3 Eggs
– 1/4 cup Milk (Dairy or almond or hemp or soy)
– 1 tbsp Coconut Oil (butter or earth balance)
– 1 tbsp Vanilla Extract
– 4 tbsp shredded (organic) coconut
– 1 tbsp Coconut Palm Sugar
– 1/4 tsp Sea Salt
– Optional: sprinkle with maple syrup, honey or brown rice syrup
1. Slice bread
2. Slice into 1-inch strips like “sticks”
3. Whisk egg, milk and vanilla extract together in bowl.
4. Soak bread into egg-milk mixture until bread is absorbed. Beware of soaking too long, which will make it too soggy to pick up and cook.
5. Dip sticks lightly into coconut. Coat all sides evenly.
6. Coat pan with coconut oil.
7. Place each stick carefully on pan.
7. Cook until brown.
8. Sprinkle with a little coconut palm sugar and salt to bring out the coconut-y flavor!
9. Optional- sprinkle with honey or maple syrup.
10. Voila! Enjoy!
Serves 2. (*But, please note- amounts may be slightly off, as I didn’t measure when making it!)
